What is a Round Roast?

The Round Roast is taken from the rear leg of the cow, specifically the round primal section.

This muscle is well-exercised, resulting in a cut that’s lean with minimal marbling but full of beefy flavor.

Due to its leanness, the Round Roast benefits from low-and-slow cooking methods to achieve tenderness. It’s an affordable option that works well for a variety of dishes, from classic roast beef to shredded beef for tacos.


How to Cook a Round Roast
  • Classic Roast Beef: Season the roast generously, then slow roast it in the oven at a low temperature. Slice thinly for sandwiches or serve with vegetables and gravy.
  • Pot Roast: Braise the roast in a flavorful broth with onions, carrots, and potatoes for a comforting one-pot meal.
  • Shredded Beef: Slow cook the roast until tender, then shred for tacos, enchiladas, or BBQ sandwiches.
  • Marinated and Sliced: Marinate the roast overnight, cook it to medium-rare, and slice thinly for deli-style roast beef or salads.

Tips for Cooking Round Roast
  • Don’t Overcook: Due to its leanness, the Round Roast is best cooked to medium-rare or medium to avoid dryness.
  • Use a Meat Thermometer: Monitor the internal temperature to ensure perfect doneness—130°F for medium-rare or 145°F for medium.
  • Rest Before Slicing: Let the roast rest for 10–15 minutes after cooking to retain juices and enhance tenderness.
  • Slice Against the Grain: Thin slices cut against the grain ensure a more tender bite.
