Each summer, our friends Mike & Maddie harvest sockeye aboard their 32-foot fishing boat, the F/V Courageous.
Every fish is hand-picked from the net, bled, and chilled within minutes, then vacuum-packed and flash-frozen at -30°F to lock in freshness.
After harvest, the salmon is cold-smoked locally in Homer, Alaska by fellow fisherman Penelope Haas (F/V Kustatan, Cook Inlet, AK) using birch smoke.
This small-batch process preserves the natural character of wild sockeye without overpowering it.
