ROCK delivers the liver frozen. Keep it frozen until you are ready to use it, then thaw the package in the refrigerator before preparing and cooking.

Our regular beef partner, Raised Wild Texas, has not been able to keep us supplied with liver. Jordan at Thrivestock Ranch agreed to make a limited amount from his own Longhorn herd available to ROCK while that supply is unavailable.

Beef liver has a rich, unmistakable flavor. The easiest place to begin is with simple preparation and short cooking rather than treating it like a steak that needs a long sear.
Pan-sear it.
Slice into manageable pieces and cook quickly in a hot skillet with the fat and seasoning you prefer. Avoid prolonged cooking if you want a more tender texture.
Make pâté.
Liver's strong flavor and smooth cooked texture make it well suited to pâté, where it can be paired with fat, seasoning, and other ingredients.
Use a little at a time.
Finely chop or grind a small amount into ground beef, meatballs, chili, or another familiar dish when you want liver to play a supporting role instead of becoming the whole meal.

We already knew Jordan through Thrivestock Ranch and the eggs he raises for ROCK families. We also knew about the small herd of Texas Longhorn cattle he keeps under the kind of standards we look for in the beef we carry.
The difference is that these cattle were not being raised as a regular retail beef program. Jordan primarily keeps the herd as part of the food he raises for his own family.
When we told him we were having trouble getting liver for ROCK families, he offered to make a limited amount from his herd available to us.
